Oh Yummy Blueberries
Today I made some blueberry lemon jam and scones to go with it. I was inspired by my Aunt Arleen who made some jam recently. This was not my recipe but I made it work with the berries that I had. The scone recipe was from my mother but really good! I bought 4 little things of blueberries from the store and used them for each recipe. One basket was about 1 cup of blueberries.
Blueberry Lemon Jam
3 1/2 cups of blueberries
the zest of 2 lemons
Lemon juice from the two lemons
6 tbs. of pectin (or 1 package)
3 1/2 cups of sugar
3 pint jars
1. Get jars in the water
2. smash blueberries and add lemon juice, zest, and pectin--Bring to a rolling boil
3. Add sugar and bring back to a rolling boil for 1 minute
4. Take jars out of the water bath and fill. Wipe clean the edges and top with ring and lid.
5. Put back in the water bath for 10 minutes.

Blueberry Cream Cheese Scone Recipe
In a food processor combine
2 cups of flour
2 tsp. of sugar
1/2 tsp of salt
1/4 tsp of baking powder
6 tsp. of cold butter (cut into pats)
**Pulse until combines and butter is in small chunks
Take mixture out of processor and combine by hand (or with a fork)
1/2 cup of milk
1 egg
1/2 cup of cream
1/2 cup of blueberries
1/2 tsp of vanilla
1/2 tsp. of cinnamon
~~reserve a bit of the milk, egg, and cream mixture to put on the top~~
Put onto a stone (if you have one) or a sheet pan like a loaf of artisan bread (flatened and round)
Cut into 8 pieces and separate the pieces a bit so the edges will get crisp
Before you put it into the oven brush the reserved milk, egg, and cream mixture over the top. You can add little pieces of cream cheese and sprinkle sugar over it if you want
Bake at 425 degrees for 12-15 minutes or until the edges start to look brown
